Add mint leaves and 1 tsp of sugar to a small dish.
Muddle the leaves and sugar.
Set aside.
In a medium sauce pan, add water and gelatin powder; whisk to combine and let sit for 5 minutes.
Add ½ cup of sugar and the muddled mint leaves to the pan. Stir to combine. Cook the mixture over medium-high heat for 5 minutes, until hot and sugar and gelatin are dissolved.
Once done, allow to cool for 15 minutes.
Strain the mixture to remove mint leaves. Return to pan and add whiskey and green dye.
Spray cooking spray onto silicone molds.
Pour liquid into molds.
Refrigerate at least 3 hours.
Remove from molds.
