Luck of the Irish Jello Shots

Ingredients

  • 1 cup John AP Conoley Bourbon Whiskey
  • 2 pkg Unflavored Gelatin
  • 1/2 cup Mint Leaves
  • 1/2 cup plus 1 tsp Sugar
  • 1/2 cup Fresh Lime Juice
  • 3 drops Green Food Coloring

Instructions

  • Add mint leaves and 1 tsp of sugar to a small dish. 
  • Muddle the leaves and sugar. 
  • Set aside. 
  • In a medium sauce pan, add water and gelatin powder; whisk to combine and let sit for 5 minutes.
  • Add ½ cup of sugar and the muddled mint leaves to the pan. Stir to combine. Cook the mixture over medium-high heat for 5 minutes, until hot and sugar and gelatin are dissolved.  
  • Once done, allow to cool for 15 minutes. 
  • Strain the mixture to remove mint leaves. Return to pan and add whiskey and green dye. 
  • Spray cooking spray onto silicone molds. 
  • Pour liquid into molds. 
  • Refrigerate at least 3 hours. 
  • Remove from molds.
  • Enjoy!
